As salamu alaykum I was going through some stories of the Prophet Ayyub ,but this may apply to stories of other Prophets. I was reading through the stories and sometimes I'd come across quotes and specific events I couldn't find a source for in the Qur'an or Sunnah. My question is how are these stories authenticated, as I have seen them used on here as well.

You have not specified exactly which events or accounts you wish to verify, nor whether they—or their origins—are mentioned in the Qur'an and Sunnah or not.
In general, regarding those stories that are not mentioned at all in the Qur'an and Sunnah, or those whose origins (without details) are mentioned in one or both of them, the way to verify their authenticity or weakness is through the reliable books of tafsīr, such as the Tafsīr of Ibn Kathīr, or Stories of the Prophets by Ibn Kathīr. Similarly, Al-Bidāyah wa al-Nihāyah by Ibn Kathīr also contains notes drawing attention to many of these accounts. Likewise, recognized books of history, such as al-Muntaẕam fī Tārīkh al-Mulūk wa al-Umam by Ibn al-Jawzī, and other reliable sources, may be consulted.
